So you've bought the brussels sprouts, the butternut squash and the kale. Now what in the heck do you do with it?

This book give very specific, detailed instructions to prepare all kinds of foods - fruits, vegetables, meats, fish, nuts. Mateljan recommends the healthiest ways to cook these foods so they maintain their maximum nutrients: mostly steaming and sauteeing with occasional boiling and braising.

Maleljan is a strong proponent of eating foods in season. He also recognizes the problems cooking in unsaturated oils. (He actually recommends using broth but I use butter or coconut oil.)

An excellent buy
This is a fabulous book, not only does it have loads of nutritional information in a great format it has great recipes too. Things are well explained with research to back up the claims. This would be a great present for a new bride or someone just wanting to treat themselves. I have over 500 cookbooks and this is a great resource I would recommend it to anyone beginners and experienced cooks alike.

This is not a recipes book
If you think this book if packed with healthy recipes, well... You are wrong. There is a recipe every ten pages... But book if full with all the info that you need about food...
But as I said, if you are looking for a book filled with healthy food recipes... Keep looking

How to get the most nutritional bang out of each bite!
I am estactic to find this book!! I have been studying good nutrition on my own for years as I have been focusing on creating healthy recipes or reworking recipes to maximum the nutrition I receive at every meal. The author of this book has organized extremely valuable information in an easy, beautiful reference guide that it easy to follow and understand. It also includes special links to his foundation's web site for creating your own "Healthiest Way of Eating" groups! I'm planning to not only start some of these groups in my area, but also rework all of my recipes to follow the techniques in this book.
